At Xurros Café, we’re bringing a little taste of Spain to Springfield, Missouri. Our name, Xurros, is inspired by the way churros are spelled in Catalonia, and it’s our way of honoring the tradition of Spanish xurrerias—cafes that exclusively serve churros.
The idea for Xurros started in 2019 when Eddie studied abroad in Barcelona through Missouri State University. He fell in love with the xurrerias he found on every corner, serving crispy churros with warm chocolate dipping sauce. When Eddie came back home, he couldn’t stop thinking about how to recreate that experience. He shared his idea with his brother Jorge, and the two of them returned to Spain to immerse themselves in the culture and fully embrace the vision of what Xurros could be.
At Xurros, our mission is simple: to create the freshest, most delicious xurros using authentic Spanish recipes and high-quality ingredients. Every xurro is made to order, ensuring a crispy outside and a soft, chewy inside. We believe in crafting an unforgettable experience for every customer, whether they’re enjoying a classic xurro or one of our unique specialty flavors.

We wanted to bring a taste of Spain to Springfield to give people the chance to step out of their comfort zones and discover something new—flavors that transport you somewhere else, even while staying right here in downtown Springfield.
What started as a food truck here in the 417 has now grown into a brick-and-mortar café. Our menu is inspired by the flavors Eddie and Jorge experienced in Barcelona, including our signature creation, The Barcelona—a sugar-dusted xurro served with rich chocolate dipping sauce, just like in Spain.
